1) Moved from contract to rolling 30 day simplicity a while ago. Does this still count for free unlock or does it end up being £15 like PAYG?

2) The instructions on the O2 site says after confirmation email:

"place a non-O2 sim into the iPhone and connect to iTunes via a USB cable. iTunes will confirm that the iPhone has been successfully unlocked"

As ive not got a non-O2 sim to hand can the unlock be done with the existing O2 simplicity sim?

yes the unlock can be done and its free.

I had the same setup and it all went through with no issues and no cost.

Cheers for that. I thought it was free but was just a bit thrown by requiring a non 02 sim.

Obviously the instructions are written for people moving to a different carrier and not people staying with O2 but wanting it unlocked to sell on when they get the new one :)
