This was such a strange sounding thread that I can't help but be seduced in to help...
Okay, so in Word, how did you insert symbols before? Did you go to Insert -> Insert Symbol in the menu bar, or did you click on a button in the toolbar? If it was a button, what did it look like? Did it have a capital Omega on it? ("Ω" -- this may or may not show up) If not, what did you do?
If you clicked on the capital Omega, you must have put it in the menu bar yourself, because it is not there by default. Click on the small triangle at the end of any of the toolbars, then on Customize Toolbar, and then in the Command tab of the menu that pops up, find Insert Symbol, and drag it into one of the toolbars.
If that's not what you mean, and I've still lost you, please explain more.
Also FYI you can make many symbols easily from the keyboard.
Option-` + a character that can take this accent -> è etc
Option-e + a character yields -> é
Option-u + a character yields -> ü
Option-i + a character -> î
Option-n + a character -> ñ
Option-c -> ç
Etc....
