Some here have expressed a desire for a Word (ms) clone. There doesn't seem to be any that I have been able to find.
There is, however, a Spreadsheet application that is fully functional, although not compatable with eXcel. From Safari, go to http://iphone.editgrid.com
Unfortunately, there doesn't seem to be any way to email or otherwise transport the files into or out of the touch. This is another one for someone else to test out as I have no use for it and do not plan to evaluate.
