Don't panic! They are still there. Just go to the menu at the bottom of the screen titled "Visit other Apple stores around the world" and select "US Education."

I freaked, too, but on mine, when I click "Select your school," it sends me straight back to the Store with the discount in place, and with the student iPod giveaway, it did the same--I clicked it, and it recognized me right off.

The Education Store works perfectly for me. They did change the screen where you pick between Personal and Institutional purchases though.
