Ok what's the deal with restore from backup being really old?

I had some issues with my phone so I decided to restore it from a back up.
I plugged in my phone, let it do it's thing. Said backing up...
I right clicked my phone and forced it again to backup. To be safe.
Restored from backup and the newest version I have to select from is months old.??
I went with not selecting anything hoping there's some hidden recent file or something. There's not.
All the old settings are back on my phone.
My phone has time traveled back 6 months.

I had the exact same issue when upgrading from 4 to 4s.
What the heck am I missing here?
Where's my current backup I just made?

Are you using iCloud? If so, it's in there accessible from your phone, not in iTunes.

Yes I am on the cloud but I also had this same issue when transitioning from 4 to 4S before the cloud was up and running.

I was also under the impression that the cloud only holds some info but not all.
IE
Previous text messages, camera roll, placement off apps on phone.

Is there a way for me to revert back to my phone a few backups ago via the cloud now?
