Old backups?

Is there anyway to retrieve old backups? I wanted to restore back to an old backup today but when I plugged in my iPhone, it automatically synced and did a backup. Now the only backup that I can seem to find in /Library/Application Support/MobileSync/Backup is the one from today. Am I screwed?


Btw, why are my backups being overwritten every time I backup?

They're being overwritten because Apple decided to start doing this sometime ago to save space. You need to save your backups somewhere to be able to use them as an "incremental" backup. So, sorry, but you have no way to get your old backup.
