Old iPhone Question unlocking& using sim (its not what it sounds)

OK this isn't a question about how to unlock the iPhone...Its more about if i buy a 1st gen iPhone and unlock it then pop in my at&t sim it will just be a normal phone from my old plan. I don't want the edge data plan thing i just want an iPhone with my voice and sms plan on it.
