Old mac w/ upgrade?

I'm thinking about getting a desktop, and im planning on getting one of those old macs from the 1990's or something, and stucking one of them g3 upgrade thingies in it. One question, would the performance of, say, an PM 8600/300G3 be WAY less than a PM G3 300(B&W)?
