I am very happy with the old MBA design, and plan to buy another one for when my current one craps out. However, I don't really want to stray further than Sierra. I'm sure a new purchase would come with the latest fandangly OS installed, so does anyone know if I would be able to 'downgrade' to Sierra? I have a bootable drive, so access to the installer isn't an issue.
 
The 2017 MacBook Air runs Sierra just fine.

However, if you buy one now, it won't come with Sierra. You'd have to get a copy of Sierra and downgrade, or else clone your existing Sierra installation over to it.

Not sure why you'd stick with Sierra though. High Sierra is a pretty significant upgrade over Sierra, and is mature. One of the problems with Sierra is it isn't compatible with HEVC or HEIF, and both formats are commonly output by iPhones now. That's a pretty big deal IMO, at least for some people.
