Old tracks spontaneously converting into Apple Music files

Hi all, I would appreciate some help.

I have noticed a significant proportion of my iTunes library songs have been converted to Apple Music files, despite the fact they were added to my library years before Apple Music existed. Is there a reason for this? Can I undo it?
