Older backups?

Hi,

I'm new to the Iphone 4s, and when I plugged it in to itunes, it backed itself up and replaced the older file.
Is there a way to get to the older backup file?? There was a text message that I was trying to get to, but now is it gone forever?!

Any help would be appreciated
