Apple holds a patent for oleophobic coating sapphire crystal. But I don't know if it will be applied to the watch.
I own a few Swiss watches with sapphire crystal and some of them have coatings which aren't great... The crystal is very hard to scratch, the coatings not so much.
The best IMHO is still a non coated sapphire crystal. Nothing compares, and it alone is worth the extra $$ you'd pay for the regular model instead of the sport.
