Why does it say 'Undo typing'? What feature is this and how do I turn it off? I typically text on roller coasters.

I wouldn't like to turn it off it's a great feature and tbh it's not a sensitive feature either!

Its the Shake to undo feature, it affects anything with text-entry I believe.
