Maybe this is a dumb question, but I know that Apple will take returns within 2 weeks of purchase, but when ordering online, when does that period begin? When they ship? When you receive it? My watch shipped June 3rd, and was estimated to arrive June 8th, but now I'm getting a message from UPS saying someone accidentally left my package somewhere and it got forgotten so delivery is being rescheduled for the 13th. So, that's actually turning this into a 10-day shipping period! Does that mean I only have 5 days left to evaluate the product? Also, WTF UPS??!

14 days from the date you RECEIVE it to return it. You have 60 days to purchase AppleCare+ from the date of purchase.
 
From Apple's Sales Policies for their online store orders:

"For any undamaged product, simply return it with its included accessories and packaging along with the original receipt (or gift receipt) within 14 days of the date you receive the product, and we’ll exchange it or offer a refund based upon the original payment method."
