I have installed open core 0.6.1 with my mac edition card for me to get the boot screen with my new graphics card. I can see the black screen with the menu of disks and i am able to select but when i install my non mac graphics card rx580 i don't see the boot menu anymore even when pressing option key.

OpenCore on the Mac Pro
First of all, make sure the RX580 with the factory ROM. I've seen lots of cases that the users bought a used card with flashed mining ROM, which breaks the GOP, and the boot screen won't work.
