I don't have any current version of Filemaker. My understanding is that the latest version can't open Filemaker 5 files. Is there anything I can do to extract data from this? Excel/Word won't open it without Filemaker installed.
 
No, you'll need the software to be able to read the database file.
 
If you have Filemaker 5 can you open your current database and export the content as a csv file or a file excel can open like xls.
Newer versions support that feature.

If you don't have Filemaker 5 here are the step to be able to open it in Filemaker 13.

If your current version of FileMaker Pro is 6, 5, 4, or 3, files will need to be converted to FileMaker Pro 11 before they can be converted to FileMaker Pro 13.

Step 1: Open File with FileMaker Pro 11
Step 2: Open File with FileMaker Pro 13 or 12
 
If you just need to get data and not buy the program, the trial may be able to help. Alternatively, the iOS apps (if you have iOS) may be able to read and I think they are free.
