Seems like Tahoe replaced the Preview app with something else when using space bar to open files?

Every time I open a PDF from Finder or Spotlight, it opens in a window with "Open in Preview" button on the upper right.

I can't search for text (or too dumb to figure out how) unless I open it in Preview.

What is that new app, does it have any advantages whatsoever over Preview, and
 
IIRC, selecting a file and then hitting the Spacebar lets you look at the file without actually opening it, think it was called "Quick Look" or something like that? I think it was designed to let you look at the doc/image to make sure it's what you wanted, and then double-clicking on the file would open it, or right-clicking on it gave you all the apps that could open it.
I tried your method, and I'm pretty sure that button to "Open in Preview" is new, but I can't remember for sure. Others will fill in the gaps, I'm sure; following.

I think BotchQue is basically correct.

The space bar has been the Mac's keyboard command to activate Quick Look since OS X Leopard in 2007. It's equivalent to choosing "File > Quick Look" from the menu when a file is selected in the Finder. A floating window pops up with the file's preview, including a button to open the file using the default app for that file type.

The keyboard command to simply open the file is still Command-O (equivalent to choosing "File > Open" from the menu when the file is selected in the Finder).

And as to the advantages of QuickLook:
It’s fast
It supports many file formats
It’s extensible so installing software with proprietary file formats can add support for that format to QuickLook
