Ever since the update to 10.6 I have lost the ability to open all videos with Quicktime Player 7 (rather than X).

I can set it for individual files but when I try to configure it for all files of the same type, the inespector automatically resets the value to "Quicktime launcher" which then opens as Quicktime Player X.

How can I configure all video files to open with 7 and why is OS X interfering with my selection of program?

(This is on my MacBook. On my Mac Pro everything appears to work fine.)
 
You might need to install Quicktime 7 - it's not installed by default for Snow Leopard.

To do that, you can download it from the Apple website or install it from your 10.6 disc.

Then, I used a System Preference pane extra (if that's what you call it!) called RCDefaultApp to set the video extensions (.mov, etc) to default to QuickTime 7.

It worked for me - hope it does for you!
