From what I've seen so far, Apple seems to be very good at providing documentation that provides a ton of information, but somehow leaves you still confused when you finish reading it.

I know the SDK is still pretty new, but since OpenGL is a portable system, could anyone recommend any tutorials on making a state-based game system with it, or anything else that would help me get over the little learning hump that i seem to be stuck at?

You can use their samples to get everything setup and then you use basic OpenGL ES to draw things. There are tons of things online about openGL ES and it's pretty similar to opengl. Use a search engine and see what you find, and as always trial and error works best. :)
