Opening files with default softwares

How do I set (once and for all) default softwares for files.
When I create a JPG file using Photoshop, it opens up using Photoshop instead of Preview.
Some of my mp3s are either opened with Quicktime or iTunes.
How do I change this? It's getting annoying? Is there some kind of Automator thing for this?
