Two different programs, SSH is a Secure Shelf (server) Program that allow you to connect computer to computer (device to device) securely since the connection is encrypted.

iFile is a File Manager in your iPhone, Same as Explorer on Windows, Finder in OS X, Konqueror on Linux KDE, etc. You can use it to navigate, edit, email, rename or run (if you have the appropriated program) any file on your file system

if you want to replace/change your icons and images in your iPhone you can use SSH, you have to use some commands to navigate (ls, cd) the file system and them other to copy, rename and backup files (rm, cp, etc).

If you would like to use a UI program, look for WinSCP (windows), Cyberduck (OS X), iPhone Explorer, iPhoneDisk (free), Diskaid (paid) - (last 3 don;t required SSH installed on the iPhone)
