So as tantalizing as the new iPad is I've decided to stick with my iPad 2 I got on release day last year. So far I haven't had any problems whatsoever and the only blemish is two small scratches on the screen. I'm planning on keeping it for another year then more than likely upgrading to the 4th Gen iPad. I have 3 days to decide whether or not to invest in Applecare, so whats your opinion? Should I spend the $70 for the security or just hope nothing goes wrong in the next year?

Put the $70 in the bank. Next year sell your "new" iPad before the "next" iPad is released. Take proceeds plus $99 you didn't spend on AC and buy a new one w/ new warranty.
