I setup a 2014 MacMini as a file server for plex and it seems to be working great. I have a question about the best way to optimize transfer speeds.

I currently have some files on the Mini itself but a bunch of files on an external drive that I'm using as a plex server. I have another external drive that I was going to use for additional storage.
I tested the drives on the mini with blackmagic. I have 500-600mbps on the internal drive (fusion 1tb). 150mbs and 100mbs on the other 2 drives. Does going over the network degrade the performance or it shouldn't since the network is faster than the drives? Is there a way to test this? I think there's a way with iperf but I'm not exactly sure.
Is there an option for a higher speed external drive that would be faster and not too expensive (trying to keep drives and enclosures to 200-300 bucks) or is this situation about as good as it can be.
