I will be ordering the iPhone 5s on Apple.com tonight. Will I be able to see how long each model will take to be in stock and ship to me? Can I see that I could receive a 16gb space grey in a week or the gold 32gb in a month and then make a choice based on that?

I think so but the availability / times quoted could change very quickly as you are checking all the models, colours etc out.
