Can I create new folders and organize the applications list?

I.e. a Games Subfolder, a Graphic Arts subfolder, etc?

I started to try doing this, and I received an error everytime I'd run photoshop until I moved it back...
 
this can be done, somewhat.

the iLife apps shouldn't be moved, otherwise you won't be notified for updates

the reason you're running into problems with Photoshop is because when you ran the installer, you installed it into your Applications folder, not a Sub-folder of your Apps, so the various parts and such don't know where to look for it because of this. you could re-install it if you wanted though
 
Not THAT big of an issue to reinstall.. I'll just have to keep this in mind for the future.

indeed. basically if the app is just one that you drop into your apps folder, you can move it at anytime to where you'd like it to be. so no harm with them.

the ones that use installers are often times trickier, especially the ones that require you to set a path for install.
