Hey folks, I read in these forum that the photo that appears in the upper righthand corner of sent mail in the Sent Mail folder does not actually get sent with the mail... in other words, the recipients of my emails are not seeing my (ridiculous) picture. Can you please confirm?

And if they actually CAN see it (or if it would appear in their address book if they added me as a contact or whatever), how can I delete it from outgoing emails? I don't want a picture, and there doesn't seem to be an option for NO PHOTO in the Window/Photo Browser menu.

If you don't want the picture (it won't get sent to others either way) then you need to delete it from the person's address card in Address Book.
