OS/X not remembering keyboard input method

For some reason I am able to add Chinese input methods, but not remove the original US keyboard input method? I can un-tick all the options except the US keyboard.

I am having a problem were certain actions seem to be switching the keyboard layout back to US. Having to continually switch it back to Chinese is a pain in the butt to say the least.

Any ideas?
