The RAM requirements have gone from 128 MB in Cheetah to 2 GB in Lion.

Imagine running Cheetah on a modern machine (assuming there is an x86 version), wouldn't it scream?

Anyhow, what is it about OS X through that makes more RAM more necessary?

If we strip away all the fancy graphics from Lion, would it be able to run on 128 MB?

I Doubt It

The demands of today's apps are the issue. I bought my iMac with 8GB but do a lot of intense video and photo work, so upgraded to 16GB this week. Even if Cheetah would run, you wouldn't be able to run anything else with it.
