I bought a copy from the Apple store for $29.99 for my uMB, but I was thinking of upgrading my Mini now, is there any way to convert the individual copy of $29.99 into a family pack so I can upgrade both? I already installed this on my uMB.

no there isn't, if you want to be honest and follow the licensing terms you have to buy another copy. Although if you just bought it recently you may be able to take it back and explain your situation, but I don't know if that will work or not.
