OSX Install Disk Queries and SSD

Can someone please clarify what the install disks include. Im trying keep everything as streamlined as possible now ive installed my SSD.

On the OSX Disk whats the "Optional Installs" exactly?

and

On the "Applications Install DVD" ..... do you guys know what exactly is on there?

There are two grey Restore DVDs coming with a Mac, one includes the system and the other includes iLife and XCode, as far as I know.
