You have to update to the GM from the downloaded .ispw file with iTunes 11.0.5 if on Windows or iTunes 11.1 beta 2 if on Mac.

GM is not available OTA.
You need to find a site where you can download the GM for your device and install it through iTunes.

Note: You will also need iTunes 11.1 beta 2 to sync your music etc with the GM version of iOS 7.

You could also wait until the 18th of September, where iOS 7 will be available OTA ;)

But not for Beta 6 users. You cannot go from Beta channel to Release channel OTA.

Is it a upgrade via iTunes then, not a clean install? I'd like to carry all my settings and apps over without having to set everything up again.

You can update using iTunes but you will need to download the IPSW and shift-update.

As far as I'm aware, it is a restore not an update.

Either way, a DFU restore with an iCloud backup worked perfectly for me!
