I bought my phone retail from a carrier, so it is locked. However, I can request an unlock because I'm not on any contract.

If I get my carrier to register my phone as unlocked, and do an OTA update to iOS 7, will the phone tell me it is unlocked when it goes through activation on Apple's server?

If I have the phone unlocked by the carrier, and then do OTA update to iOS 7, I have to activate the phone again via Apple server.

Will my iPhone know that it is unlocked after this? I don't want to install iTunes on my PC to restore to get the unlock.

Once unlocked, always unlocked. Doesn't matter how you update. You won't get a screen telling you it's unlocked if you do it OTA but it will still be unlocked. The only time you get a "congratulations your iPhone has been unlocked" screen is if you do it through iTunes.
