I've got a 7,1 showing up today, 16-core, 96GB, 2 TB, 580X. Spending the last couple days searching the forums I see the Accelsior 4M2 is listed in the working cards list, but some people having problems with stability in Sonoma. I have a couple of 2TB 980 Pro sticks I'd like to use for storage not in raid with the thought of adding more sticks in the future.
I went down this path after getting a deal on a RedNet PCIeR Dante card in a OWC Thunderbolt case, and have been using it to record and playback tracks through a Yamaha sound board with my 2019 MacBook Pro running Sonoma. I also in the last couple weeks used Waves SuperRack Performer to host a few plugins through Dante also. Other than the laptop seeming a little warm I've had no stability issues. I pulled the trigger on the RedNet card before investigating and finding out the card will not work with Apple silicon. My thought was the Mac Pro will do this all easier than the laptop and get rid of the pain of setting up the laptop with all the dongles attached, Thunderbolt PCI case, USB C to HDMI for larger monitor, USB C to ethernet for Dante controller. I have a rack in the venue the computer can live in.
The MacBook running Sonoma with Nuendo Live and Waves SuperRack Performer have been working fine, but I read people having problems with Sonoma on the MacPro which was what I was thinking of running. Both of those softwares say they would work under Ventura also.

TLDR
So after all that, what would be the most stable OS to be using in my case. For audio, and if I purchased the OWC Accelsior 4M2.
Sonoma or Ventura ?
I know people with no problems don't post much, just the people having issues. I see this in the HomeKit forum and the MacStudio forum. I own a M1 Studio at home and I've luckily not had any issues with it or my Homekit devices.

 
I'm personally not a fan of using the latest macOS for audio applications. However, I also had various issues with macOS Ventura. I didn't test Sonoma extensively, but after experiencing major problems with SSDs on PCI Express cards, I went straight to Sequoia—back then, even version 15.0. We're now at 15.3.1, and I can say that with my audio applications and my 7,1 Mac Pro, I have absolutely no issues. In fact, I experience even fewer problems than with macOS Monterey, which was already very stable. So, from my experience, I can highly recommend it. It runs absolutely flawlessly on the 2019 Mac Pro.

After just reading something on OWC's site I found linked in another post, maybe Sequoia is the right route.
