Pages etc in separate folder or in the pages folder?

Hi,
I have iPhone, iPad Pro and a MacBook Pro.
When I'm using applications like Pages etc. how should I save the documents for the best experiences?
In the Pages folder in iCloud or can I do a own Archive for it?

This Q is also for PDF files, I have the PDF Expert license.
