Is there a way to get an iWork Pages sheet to look like a sheet of legal pad with lines, etc??

You could always scan a sheet of legal paper and paste it in as a background. Pages will let you lay text over graphics. But unless you've got a full-bleed printer, it's going to look pretty funky on the printed page.

You don't have to scan anything. All you have to do is to replicate the metrics and color of a legal pad's guidelines in your favorite vector-graphics format. Use it as your background in Pages. Better yet, replicate the guidelines as a blank table.
