I have to say, Apple's dictionary implementation is both great and extremely uneven. I have set the system to successfully use the British English dictionary, but I can't get Pages to speak anything but American.

Help! I will not be happy if I have paid for a word processor that can't even access a British dictionary that is part of the system software made by the same company!

yup - bugs me too.

the only way i've found to do it is go to inspector -> T -> more
then select british english

unfortunately you have to do that for every document :(
 
Are you setting the language in Pages via the Inspector? My recommendation would be to save a new blank document as a template after setting the dictionary. This is what I do to get French language documents in Pages.
 
For me, Pages will default to the dictionary for the language listed first in the system International preferences. If British English is listed first, that becomes the Pages default.
 
Solved it!

Did some fiddling round & think I've got it:

Go to System Prefs -> International -> Language

then click 'edit list'. There will be an option for British english; so tick the box, click ok & make sure its at the top of the list.

Then open pages. A bit convoluted, but I'm happy i've finally got it sorted

EDIT: darn, just too late!

Hey apple - what's wrong with 'English' and 'American English'? We invented the language you know...
