You need to open Pages on your iPad (when connected to your Mac) then send each individual document to iTunes....It sucks but it does work!

Click to expand... What you describe is the share/export function. When you backup to iTunes on your main computer the data is backed up along with the app.

If you think you know a better way, then lest me know. I'd like to see it work!
