Can anyone tell me when I back up my iPad, does it also save my documents somewhere? I would hate to loose any of my papers that I have written.
 
You need to open Pages on your iPad (when connected to your Mac) then send each individual document to iTunes....It sucks but it does work!

What you describe is the share/export function.

When you backup to iTunes on your main computer the data is backed up along with the app.
 
You can not export Pages, Numbers docs. unless you use sync. If you think you know a better way, then lest me know. I'd like to see it work!

You are correct.

What they asked was "when I back up my iPad, does it also save my documents somewhere?" and the answer is yes.
