There was talk about watchOS 10 allowing more than one iPhone to pair with an apple watch. Whatever happened that?

No such talk. Apple Watch is a satellite of iPhone not a master so can’t pair with more than one iPhone (its master).

I looked up analyst841 on X and it's now shown as a "parody" account created in May, the original apparently deleted sometime after the supposed leak occurred.

It certainly seems likely Apple is trying to figure-out how to accomplish what you want--will have to keep an ear to the ground to see if/when something comes of it.
That name sounds familiar. I believe this dude had a sister that worked for Apple that was feeding him inside info to leak. Apple caught wind of this, canned the sister and shut this guy down. If that’s the same guy, then it’s possible this was actually in the works or the sister was solely given this fake info to see if she would leak it.
