Pairing my watch without doing a reset.

Is it possible and how do I do it? I just did a restore on my phone and want to pair my watch without reseting my watch.

Just reset it, pair it and then choose restore from backup on the watch when prompted.

OP didn't say if they restored their phone from a backup or set it up as new. If the phone is set up as new, it doesn't contain a backup of the watch.
