Sorry for the noob question, I have read online, but want to ask for any other tips or warnings.

Years ago, I lost lots of health data when I unpaired a watch from my phone, then re-paired it (I don't know why or what I did).

I have just received an iPhone 13 and want to pair it to my current AW5 but want to make sure I don't lose all of my health and activity data. I have icould backed up my current iPhone 11. I am trading in my current iPhone and will wipe it after the upgrade.

Do I unpair my AW from my current iPhone first? Simply pair it to my new iPhone? I am unclear on the exact order of steps.

In Settings - iCloud do you have Health enabled? That should keep it stored as part of your iCloud account.

For a belt and braces approach, I always do an iCloud backup as well on my phone before unpairing the watch.

^^^. What he said...it should be nearly impossible to lose any of that data if you have them all turned on (though Wallet will require you to set up your cards again).
 
When I did a Direct Transfer instead of iCloud Backup it not only transferred all my data but some time later it then asked would I like to also transfer the watch I was wearing associated with my older iPhone.
I didn’t even have to take my watch off my wrist…. Everything got transferred over to the new iPhone.
