PalmMemo replacement: evernote? younote?

i just switched from a palmpda to the itouch. Iusedthe palm memos alot

what program wld allow me to write memos on my mac and sync to my itouch w/o needing internet connection? and vice versa from my touch to the mac w/o needing the internet?

from what i have read on this site, younote and evernote need the internet.

syncing will always require either an internet connection, or simply a wifi network, which can be created with any mac
however, all programs sync differently
