Well Im trying to install Windows XP for my mom but to install Windows XP using parallels one of the steps is to "Choose Default CD/DVD-Rom from the Devices menu." but under the deivces menu its all grayed out... not sure how to fix this... any ideas?

Oh and If i just click Play with WIndows XP SP2 Prof in the drive it crashed the MacBook

To fix the crashing issue, you need to download the newer version of parallels. That happened to me at first, every time i tried to start it would Kernal panic. Download the never version and you should be all set.

Edit: Doing an Update for Parallels right now
Edit #2: Is it possible to use Parallels with an External Hard Drive.. that install was almost painless...
