Right so I'm in a hotel, Macbook wired to the Internet via Ethernet.

I created a new network, set up a password etc. and then when I told the Macbook (in the 'sharing' preference pane) to share, it seems to have overwritten my network settings with a very generic (computer name's Macbook) open wifi network. My iPhone and iPad are now connected, but the rest of the hotel could be, too.

Any idea how to share wifi via a MacBook more securely?
 
From the Sharing preference pane, you should see a Airport Options button on the bottom right. This will take you to the screen where you can setup a password. Unfortunately it only uses WEP for encryption, which isn't very difficult to hack, but does give you some protection against casual users joining the network.
