You password protect a folder by setting privileges that allow access only from your account. Then you allow access to your account only to you.

another way...

This isn't a folder, but works great. Using disk utility, create a new blank disk image of the desirable size, choose to 128-bit encryption, and then use a password (do not choose to save the password).
