I always have some music on before bed until I fall asleep, and usually a sleep timer does the job, but for podcasts or when I am struggling to fall asleep I have to keep resetting the timer.
The Apple Watch detects when I've fallen asleep, so is there a way to use that information with a Shortcut or a 3rd party app to pause any media playing?

I don't think it detects you fell asleep when it happens, more like when you tell it when you wake up by turning off the alarm or turning off sleep mode, it goes back over the data collected overnight and determines when you were asleep.

I also like to have music/podcast/video playing while I fall asleep, and agree that it'd be a nice feature if the media stopped playing automatically when you fall asleep. But I don't think that function is possible right now.

Given the sensors in the Watch, there's really no way for it to reliably know when you drop off. It can only go by things like heart rate and arm movement.
