I am after a Word to PDF converter that will sit in the Dock and allow me to drag DOC files from the Mail app to the Dock icon an have them converted to PDF. Does such a piece of software exist?

im sure there is...
I don't have one...
I just simply open the doc file and click print. Under the print dialogue to the lower left you can click save as PDF. Thats what I do.
After that I use Preview to combine multiple pdfs together into one big one.

You can use automator to create a workflow that will "print" PDFs from word using Preview. This is free, easy, and built right in to OS X. Let me know if you need detailed instructions.
