I recently upgraded from iPhone 11 Pro to 16 pro max. When I was on the 11 pro, no one had any complaints about hearing me during a call. Now everyone says they can barely hear me, or I'm in a tunnel. I dunno if an AirPods(s) crapped out right when I made the switch or there is some setting that I don't know about. I set up the phone just like the old one.

I know it's kind of a long shot, but any ideas to look for or try would be appreciated. Thanks.

Also, voice to text is lousy too. So it's not just calls. I have also unpaid and paired again.

If you restored the phone from backup then all settings should be identical, if I were you I’d use a voice recording app on your computer AND on your phone, record yourself speaking the same sentence in the same conditions on both devices and see if they sound the same in playback to you.
 
I'm having this issue too. I did the voice recording app and found the left microphone was barely working. You can change the microphone from automatic to the left or the right airpod. I found the right worked better than the left. Mine are 4 years old so maybe it's time for some new ones . I also did the voice recording app with the old wired headphones and I was surprised how good they sounded. I may just go back to those.
