I know that using MyOS to disable things like homescreen wallpapers and multitasking will yield performance benefits, but what about unified iPod? I'm not sure how much processing power that takes.

Unified iPod is just the result of some edits to a property list file. There won't be any performance benefits from disabling it.

I have disabled homescreen wallpapers, and I disabled multitasking for about a week, and I did notice better battery life, but I didn't realize how much I've come to rely on the multitasking bar. (And the orientation lock)

Yeah, I didn't realize it either. I switch to different apps using the multitasking bar even when I am on the springboard.
