Sending in a iPhone for battery replacement will take approximately five day turnaround. Anybody have experience with using your Apple Watch cellular plan during a five day period without a phone? I will have to turn off my phone (wipe it clean) and store as new when it is returned. Will that have any bearing on the Apple Watch connectivity.

However, my question is, if I wipe the phone clean before sending it in, wouldn’t this go ahead and unpair the cellular function to my Apple Watch? and if so, wI’ll I still have full function of my cellular Apple Watch? I don’t wanna send my iPhone in for battery change with all my information on there and this is why I wanna wipe it clean.

I've never done this but I assume that wiping the iPhone will include un-pairing any AW, thus leaving the AW "useless" (in a ready to be paired state).
You might be better off contacting Apple about this ...
or, do you know someone you trust with an iPhone to temporarily pair your AW to - but that might be challenging with the cellular plan

Edit: I’ve decided, instead of keeping my phone another (12 Pro) year, I will just replace it with the iPhone 15, pair with my new ultra watch when it comes out, then send in my old phone for a new battery, and keep it as a spare.
