I currently have an iPhone X, paired with 2 Apple watches. If I use Quick Start to migrate to my new iPhone 12 Pro, will it automatically migrate my watches to the new phone or do I need to unpair them from the current phone and then pair them with the new phone as a separate step? I've seen conflicting info on this. TIA
 
I'm not sure about 2 watches

but I have a series 5, and just went from an 11 pro to a 12 pro

the watch move was seamless, it asked me if I wanted to, and it did it.
it took a few minutes for it to handle the move, but was really smooth.

no unpair from the old phone needed.

I too am going to an iPhone 12 pro from an iPhone X. This is the instructions they sent me

Before you begin
If you have an Apple Watch and you got a new iPhone, unpair your Apple Watch from your previous iPhone before you set up your new device. Unpairing automatically backs up your Apple Watch so you can restore it after you pair with a new iPhone.

Make sure that you have a backup of your device.

Have your Apple ID and password ready.

Transfer your SIM card. If your new device needs a different SIM card than what you have, or an eSIM, contact your carrier.
 
The migration process did not transfer my watch over even though it asked me if I wanted to. After the phone information was transferred to the new phone I had to unpaired my watch for my old phone and then parrot to my new phone. Luckily I had backed up my watch faces to my iCloud drive so I just had to install a few apps and go through the settings to make them the way I want them again, not a big deal but would’ve been nice if it had work the way it was supposed to.

I have 3 watches pairs to my phone and it did not go smoothly. It appears that the watch that I was wearing paired ok, but I ended up having to unpair the other two from my old phone and then re-pairing them with the new phone. That's an evening of my life I won't get back!
